千层芝士蛋糕 Layered Cracker Cheese Cake

A bright & sunny Sunday! ^^

Mommy has forgotten when was the last time she baked cakes for the boys.

Mommy was quite free today and decided to bake something for the boys. Remembered the 2 packets of cheese cracker which laid in the cupboard for sometime, mommy decided to try the layered saltcracker cheese cake which was strongly recommended by Jennie. Thanks Jennie for her sharing! ^^

The recipe looked easy, basically it is about a layer of salt cracker & a layer of cream cheese then set for chilling and done! Sounds really easy, right? ^^


Here is the recipe:

Ingredients材料:

for the cream cheese filling 奶油芝士陷:
Cream Cheese 奶油芝士- 250gm
Sweetened condensed milk 炼奶 - 6 tsp
lemon juice 柠檬汁 - 2 tsp

for the crackers 饼干:
Khong Guan Saltcheese crackers 饼干 - 2 pkt
full cream milk (for soaking) - 200ml
大约200ml牛奶(浸泡饼干)

Remarks备注:
1) you can use any brand which you are familiar with. All the above were bought at a mini mart nearby (not much choices). 不一定要用以上的品牌,你可以选择你所习惯的材料.
2) 6 table spoons of condensed milk is not sweet, you can adjust according to your need.
6大匙的炼奶并不会太甜,如有需要,你可以增加分量.

Method:
1) Beat the cream cheese with condensed milk till it is a little fluffy. Then, add in the lemon juice & mix well. Leave the cream cheese mixture aside.
2) Soak some crackers in the a bowl of milk for about 10 seconds, then arranged them in a container or tray. 
3) Put a layer of cream cheese on top and another layer of soaked crackers.
4) Repeat 2) & 3) until all the cream cheese mixture & soaked crackers are used up.
5) Chilled in the fridge for at least 4 hours before serve.

做法:
1)将奶油芝士和炼奶用搅拌器打至光滑,加入柠檬汁,搅拌均匀,待用。
2) 将饼干分批泡在鲜奶里大概10秒钟,然后把它们排入预备的空盒或烤盘里。
3) 然后在饼干上加入一层奶油芝士陷。
4) 重复步骤2和3直到用完所有的材料。
5) 放入冰箱冷藏至少4个小时。

    1. Dear Suyin, so sorry for the late reply.
      This Saltcheese cracker can be bought in Indo or Sarawak :(
      Anyway, you can use other type of cheese cracker to replace it.

  4. Erm, I only have 250gm cream cheese. Is that enough to make .layered cracker cheese? I thought we have to use 250gm only

  5. Hi hi... Yes, you only need 250gm of cream cheese to make this layered cake. Actually it doesn't really matter how much cheese you use, the only different is how many layer u can make. If you want it to be thicker, then you need to have more cheese or use a smaller container (but more difficult to place the cracker in order). Good luck! ^^

  6. Mommy's Sunny, it won't set. Isn't because the cheese is too thin? We shld set in freezer or fridge?

    1. Sorry for the late reply, i jst managed to recovered my blog. Applied a thicker layer might help. Chilled it in the fridge, not freezer :)
