榴槤芝士蛋糕 Durian Cheesecake

 
没有很爱吃榴槤,但却无法拒绝它的周边产品。

上星期做了很叫座的香芒芝士蛋糕,
妈咪怀孕的Nini表妹就马上提议再做榴槤芝士蛋糕,
好巧妈咪也正在找好吃(一定要够浓郁)的食谱。

N年前,怀孕时也很想吃榴槤蛋糕, 但都没找着好吃的。
最后买了一本食谱自己动手做,结果还是不满意那个没有浓郁味道的蛋糕。

外婆的生日到了,今年就烤个榴槤蛋糕跟她庆祝。 



榴槤芝士蛋糕
 
食谱来源: 看过bakericious的食谱之后,再依自己的感觉乱乱做。

These are the things u need to prepared

饼皮 For base:
130gm 牛奶饼干 milk biscuit
130gm 溶化牛油 melted butter
2大匙幼糖 tbsp caster sugar 

先将饼干压碎, 加入所有的材料混合均匀. 准备一个7.5"的圆型模将混合物放入,压平,然后放入冰箱冷冻.
Crush the biscuits, add in the remaining ingredients and mix well. Press the crumb mixture evenly into a 7.5" round tin. Chill in fridge until firm.

榴槤馅料Durian Filling:
350gm 榴槤肉 durian meat
250gm 软化奶油芝士 cream cheese (soften)
55gm 幼黄糖 soft brown sugar
2大匙栗粉 tbsp cornflour
120ml 椰奶 coconut milk
70ml 鲜奶油 whipping cream
2 鸡蛋 eggs 

做法:
1. 软化奶油芝士加入幼糖用慢速打至光滑, 逐粒加入蛋拌匀. 然后加入栗粉, 椰奶和鲜奶油慢慢拌匀. 最后加入榴槤肉拌匀.
2. 将芝士糊倒入饼皮上, 放入预热的烤箱以160C烤50-60分钟.
3. 让芝士蛋糕在烤箱中慢慢冷却, 1小时后取出放入冰箱冷藏至少6小时.
4. 依照各人喜爱做装饰.

Method:
1. Beat cream cheese and sugar until smooth. Add in corn flour, coconut milk, whipping cream and mix well. Lastly durian flesh and mix well.
2.Pour cream cheese durian mixture onto the chilled biscuit base and steam bake at 160C for about 50 to 60 mins.
3. Leave to cool in the oven for 1 hour and then chill for at least 6 hours before serving.
5. Decorate as desire.

After chilled: deco with durian whipping cream

Sprinkle with Chocolate
